Simply sauced is a small catering company based near Tunbridge wells. The business was started in 2009 by Manda Nicoll and Sue lucas who both have many years of catering experience

Sue started cooking in her mother,s pub from leaving school and then went on to spend ten years catering in ski resorts.   She then went  on tour with ‘A’ list bands as a member of the catering team and has since run her own tea rooms.  Apart from catering she completed a degree in garden design in 2001 and has designed and maintained a large range of gardens.

Manda ‘s catering experience started in 1983 when she ran a French restaurant in her family pub. . Since then she has worked in local pubs, ran large bar be ques for a sporting venue and been the main cook for a stately home restaurant.  Manda is involved with running her local farmers market and has a good relationship with the farmers and food producers who sell their produce there.

Manda also has a degree in garden design , completed in 2003, and has created many different private and public gardens.

This combined food and design knowledge gives simply sauced an advantage when it comes to not only preparing and presenting great dishes but also creating beautifully decorated venues.

Our Ethics:

At simply sauced where possible  we use fresh,  local and seasonal ingredients.  We grow many of our vegetables, salad ingredients, herbs and flowers and are committed to creating high quality, well researched dishes.

We have been strongly influenced by French ferme auberge restaurants,   where most of the food and drinks that are put on the table are home grown. There is a limited choice but everything is made with care, commitment and respect for the ingredients; we apply this philosophy to the English, Indian and Mediterranean recipes we love to cook.

All our recipes listed are ones we have used many times, either at home or for the public, using ingredients we like to eat; the majority of which are sourced from local farms, shoots and gamekeepers.
